Did someone say special on bananas? If so, then how about a gluten-free banana bread bake marathon.
Mix DRY in a bowl
1 cup sifted coconut flour
1 tsp xanthan gum
1 pinch of salt & baking soda
1 tbsp of cinnamon
1 tsp baking powder
3 tbsp xylitol
Mix WET in a blender
3 – 4 bananas (depending on size)
3 large eggs
1 tbsp vanilla extract
3 tbsp grape seed oil
1 cup molten coconut oil + 3 tbsp butter.
Mix dry & wet. Pour into a super-buttered bread pan & bake 35 min at 170°c.
Then, switch oven off & allow bread to stay in additional 15 minutes in oven. After that you can take it out and allow to cool for 15 minutes still in the pan, before taking out. Indulge cold or warm.
To store it, I cut into sandwich slices, add into a zip lock bag to freeze. To defrost, just remove from freezer & let it defrost on its own OR fry a bit in butter.
