Original Muffin design, that happened during a improvised baking sessions!
HERE IT IS – Short and sweet!
Mix DRY in a bowl
1 cup rice flour (sift)
½ cup sugar (or xylitol)
1 table spoon baking powder
1 teaspoon of xanthan gum
Blend WET in a blender
1 banana (smashed)
1 table spoon vanilla extract
¼ cup olive oil
½ block of dates or 125g (half of 250g)
Blend wet ingredients in smoothie maker (to get the dates fine enough to your preference)
Add wet’s to dry ingredients. Mix until all ingredients are well blended. Leave for a 1 minute. Mix again for a 1 minute, leave for a 1 min and then one more time mix.
Bake in oven for 25 min at 170 degrees.
