Apple Protein Muffin

Rich and easy Apple Protein Muffin. This is the stuff that keeps we awake at night to create it in my mind and then I hope this recipe will work out next day….. Well it did!

FIRST, cook for 8 – 10 minutes

  • 2 Granny Smith Apples
  • your preferred low carb sweetener to taste (or if you like honey *but it will add more calories on the below macros)
  • 2 tbsp cinnamon
NEXT, blend in a blender

  • 2 egg whites
  • 4 whole eggs
  • 2 scoops Iso-Whey Vanilla
  • 1 tsp baking powder
  • 2 tbsp vanilla essence

THEN, add the cooled off apples to the blender and blend again for about one minute.

Pour the liquid batter to a greased muffin baking tray (I used Cook n’ Spray).  Sprinkle the crushed almonds and cacao nips over (or anything you like – remember, be daring and creative).  Bake for 15 – 20 minutes or until the tooth prick test confirms they are done.
