Jip, Tofu Cake. If ja gona’ have dessert, make it with protein at least. You don’t have to be a vegetarian and vegan to enjoy Tofu, as this soy-based product is such a versatile food source and be a fun and affordable item in your kitchen.
Quick fact > Tofu’s nutritional breakdown is awesome! And it’s a great source of protein. One half-cup of tofu contains:
- 10 grams of protein (the equivalent of about half a chicken breast)
- 25 percent of the daily recommended value of calcium
- 11 percent of iron
- 5 grams of fat
- high phosphorous, magnesium, copper, and selenium

So go and have fun with this recipe!
Ingredients
Oats granola: – 50 g oats – 10 g butter / coconut oil – 50 g dark chocolate (sugar free if preferred) – low calorie sweeteners of choice – a pinch of salt | LEMON FILLING: – 70 ml lemon juice – 250 g silken tofu – 2 Tbsp corn starch – 1 tsp vanilla extract – sweeter of choice – ½ tsp lemon zest – 1/4 tsp turmeric – a pinch of salt | PROTEIN SAUCE: – 1 Scoop of chocolate protein – 1 tsp dark Cacao – 1 Tbsp milk (whatever you want). – Add 1/3 tsp xhantham gum to thicken |
Prep:
1. Carefully melt butter & chocolate, add oats & rest & mix. Avoid cooking. Bake at 180°C for 30 min (or until crunch preference achieved)
2. Blend all filling ingredients until smooth
3. Poor into round or square silicon baking wear (even muffin tray works) & bake at 175°C for 30 min
4. Allow to cool completely and then cut into 8 squares
5. Once cooked, add coats on top & garnish with some protein sauce. ENJOY!
