Banana and Date Muffins


Original muffin design, that happened during a improvised baking sessions!

HERE IT IS – short and sweet!

 Mix DRY in a bowl

1 cup rice flour (sift)

½ cup sugar (or xylitol)

1 tablespoon baking powder

1 teaspoon of xanthan gum


Blend WET in a blender

1 banana (smashed)

1 table spoon vanilla extract

¼ cup olive oil

3 eggs

½ block of dates or 125g (half of 250g)



  • Blend wet ingredients in smoothie maker (to get the dates fine enough to your preference)


  • Add wet’s to dry ingredients.   Mix until all ingredients are well blended.  Leave for a 1 minute, then give it another blend for about a 1 minute and repeat once more. This is to check the texture of the mixture.  If it seems too sticky and solid, add in a tablespoon of water or milk.


  • The batter should flow easy into the pre-waxed muffin tray.


  • Bake in oven for 25 minutes at 170 degrees or until toothpick test comes out clear.
