Apple Protein Muffin

Rich and easy Apple Protein Muffin. This is the stuff that keeps we awake at night to create it in my mind and then I hope this recipe will work out next day….. Well it did!

FIRST, cook for 8 – 10 minutes

2 Granny Smith Apples
5 drops Sweet Drops Stevia (or honey if you prefer)
2 tbsp cinnamon
NEXT, blend in a blender

2 Egg whites
4 whole Eggs
2 scoops Iso-Whey Vanilla
1 tsp Baking powder
2 tbsp Vanilla Essence
THEN, add the cooled off apples to the blender and blend again for about one minute.
Pour the liquid batter to a greased muffin baking tray (I used Cook n’ Spray).  
Sprinkle the crushed almonds and cacao nips over.  

Bake for 15 – 20 minutes or until the tooth prick test confirms they are done.
